Everyone will know a few popular songs with a 12/8 time signature and recognize they somehow sound different than the average pop song, but probably can't put a finger on what exactly it is. Once you know what it is, 12/8 time signature is very easy to figure out as it has a very distinctive sound that most people will immediately recognize. Let me explain it like this: imagine a kick drum pounding four times, just like it would when creating a beat in a 4/4 time signature. Now you add hi-hats, but instead of hitting it four times with every kick, you only hit it 3 times each.
