Which are the best spices/seasonings for meat?

Salt & Pepper are obvious and important, but what else do you like on your meat? And to which kind of meat does it fit well?

Goes with baked chicken and Turkey - a mix of paprika and butter is even better and gives a nice crust, esp. on the skin. I like paprika only in small doses.
