Not every band in this subgenre is like Cannibal Corpse and actually some of the best death metal bands don't have gory lyrics although death metal is an extreme genre and lyrical themes are still dark.

Some bands changed their lyrical style - for example, early Death (80s) was gory, but their 90s songs weren't.

1 Opeth Opeth is a Swedish progressive death metal band from Stockholm, formed in 1990 by David Isberg, who invited Mikael Akerfeldt into the band as a bassist. Isberg ended up leaving the band, which lead to Mikael becoming the band's vocalist, guitarist, principal songwriter, and driving force. Along with Edge of Sanity, Opeth is credited with being the first progressive death metal band, although they now play progressive rock. Akerfeldt is good friends with Jonas Renkse of Katatonia, and Steven Wilson of Porcupine Tree.

Their lyrics are mostly about the Vikings, their Gods and Norse Mythology (pagan Gods).
But Vikings were warriors so in the songs about battles there is some blood but to me it isn't "gory", not more than in the history movies and documentaries.

Ne Obliviscaris prefer to be labeled extreme progressive metal and not death metal but in some interviews journalists called them death metal and the band members didn't correct the journalists so I really don't know what to think about this.
On the Metal Archives (EM) they are labeled Extreme Progressive Metal. But I think they are progressive death metal because part of their vox are growls and the instrumental part of their music is prog death metal. Their clean vox are soft and proggy (similarly to Opeth).
