Pikachu was originally planned to have a stage-two evolution called Gorochu, which was cut to maintain game balance
After looking up pictures, Gorochu seems to have had horns and was a redder color. This would probably explain Raichu's coloring as opposed to Pikachu's. (Pichu obviously didn't exist at the time but is shown to be a paler yellow.)

Pikachu love eating berries and roast them using their electricity
They have a habit of electrocuting anything new too.

Pikachu are not harmed when struck by lightning
Haha, this reminds me of a Pokémon episode I saw when they were fighting Zapdos or something. It kinda went like this:
(Pikachu got struck by lightning from Zapdos and falls to the floor)
Ash: "Pikachu! Are you okay?"
(Pikachu jumps around like he's hyper and ate too much sugar)
Pikachu: "Pikapikapika!"
Ash: You seem alright.

This was shocking because this many amps could leave a human with severe burns. I guess it's a Pikachu perk.

Pikachu has cheek pouches that were inspired by squirrels
It was meant to cute-ify Pikachu, and hey, it worked! I guess it's also kinda because they store electricity in their pouches, like squirrels store nuts in their cheeks.

I guess that's why I've seen some really confusing and slightly deformed (body size-wise) Pikachu art, specifically on Pokémon TCGP.

That is a lot of mouse Pokémon. I wonder why there are so many. Couldn't they have just named them something else?
