They have a lot of power, sure, but they have blood instead of ichor, a god's version of blood. Since the gods in God Of War have blood instead of ichor they are mortal. They can be killed. Like Superman, he is often seen as infinite while he clearly isn't. He clearly is not limitless. His healing factor is has its limit. Beings like Zeus and Sentry could strike that healing factor out.
