Luffy's backstory was the most interesting for me.
Vinsmoke Sanji, most commonly known by his moniker "Black Leg" Sanji, is a fictional character in the One Piece franchise created by Eiichiro Oda. He is the cook of the Straw Hat Pirates, as well as the former sous chef of the Baratie. He is also the third son of the Vinsmoke Family, thus making him a prince of the Germa Kingdom. No other character backstory got as much focus as Sanji's backstory. It was got covered in three different arcs and I suspect we will get even more later because his family can still be important for future events.
I thought it was very original and also very sad. It was also he focus of an entire arc and got integrated in the curent plot better than other backstories so it was pretty interesting. And it's sill being relevant in the next arc (Wano) something I didn't expect. Other than Reiju and the mom, his family are not exactly likable but I found them cool and interesting characters in my opinion. Except Judge. I'll never forgive him. >:
Sanji's backstory played a crucial role in the Whole Cake Island arc and has big ramifications for future events so that makes his backstory one of the most important ones we've been shown so far.
Sanji's backstory was so sad and heartbreaking. I almost cried 3 hours without stopping.
"Surgeon of Death" Trafalgar D. Water Law is a fictional character of the One Piece manga franchise created by Eiichiro Oda. Lost a family twice. One his real family and the other is a man who tried to save him from death and falling in the darkness. But in the end he ended up alone with the ope ope no mi to heal himself and revenge to the man who saved him. Law was supposed to die after 3 years but thanks to carozon he saved him. Law was the saddest one piece backstory to me and of course not forgetting about Robin and Sanji.
This backstory was so interesting and in the same time very sad. One of my favourites. Law literally deserves the world.
Corazon was just the greatest. He alone makes Law's backstory worth it.

Nami is a fictional character in the One Piece franchise created by Eiichiro Oda. She is based on Ann and Silk, two characters from Oda's previous manga Romance Dawn. After Nami's backstory people start to love One Piece.

Nami's backstory was the reason why people continued watching one piece. Honestly her backstory is one of my favourites, I loved it.

"Devil Child" Nico Robin is a fictional character of the One Piece manga franchise created by Eiichiro Oda. Her home island was destroyed by the world government when she was only 8. It just showed us how awful the WG can be. Robin's backstory was one of the most interesting backstories in anime for sure
